    The second outpost of Hubert Keller's Burger Bar concept (the original is in Las Vegas) is one of the acclaimed chef's two restaurants in the Lumiere casino complex. Burger Bar offers countless variations on the standard burger, with nearly four dozen different toppings -- from different cheeses, bacons and vegetables to cranberry sauce, marinated anchovies and even foie gras -- to go with several different kinds of beef, as well as bison, turkey and a vegetable patty. "American Kobe" beef is luscious, but expensive. The menu features six "Chef's Burgers" designed by the kitchen, including the $60 Rossini: American Kobe beef with foie gras, shaved black truffle and a Madeira sauce.

    The first local outpost of a rapidly growing, heavily branded, national chain, Cheeburger Cheeburger offers burgers, fries, onion rings and shakes in a faux-diner setting inspired by the famous Saturday Night Live sketch. If you can get beyond the kitsch, you'll find good burgers made from ground Angus beef and a lengthy list of toppings and condiments to make the burger your own. You get your picture on the wall if you can finish "The Full Pounder," which actually weighs twenty ounces before it's cooked. Whether this constitutes an honor or a shame is a matter of personal preference.

    Hidden in an almost abandoned shopping strip, this long-standing veteran-friendly Valley Park dive still manages to be "a place where everyone knows your name." Though not much to look at from the outside, the inside is welcoming; it's highly likely that after only one visit, the bartender will personally introduce you to the regulars. Once inducted into the ranks, you will have no choice but to hear more than one of the stories that accompany Cheers' photos and memorabilia from past and present Army Special Forces. The pool table, substantial menu (including breakfast on Sundays), stage for live music on the weekends and plenty of space for the occasional drinking game offer something for everyone. Just don't be deceived by the mislabeled sign behind the bar: This is not McKenna's Irish Pub; no one is trying to fool you; they have been and always will be Cheers (since 1990). Someone just didn't know *their* name -- yet.

    Opened as a means to provide food service to ravenous soccer fans at the adjacent Amsterdam Tavern, the Dam is the quintessential burger-and-hot-dog shack. Unlike traditional bar food, however, the Dam lives by its motto “slow food, fast,” using antibiotic and hormone-free local meats and seasonal, organic produce grown by local farmers. The result isn’t exactly health food – menu items include a selection of hot dogs covered in everything from cheese to jalapenos (one is even deep fried and wrapped in bacon), and Belgian-style fries dripping with mayonnaise. The Dam’s signatures are the fresh, hand-packed burgers; its namesake offering is a take on the patty melt served on buttery grilled sourdough with American and Swiss cheese. If one is feeling especially brave, if not slightly masochistic, the Dam’s "Animal" burger lives up to its infamous reputation. It’s three patties, smothered in sweet and spicy barbecue sauce, American cheese, grilled onions and a whole hog’s worth of bacon. The "Animal"’s piece de resistance is the grilled whole jalapeno that sits atop the patties and infuses the entire sandwich with its fiery flavor. Wear your stretchy pants.

    Danno's American Pub is a bit off the beaten path for the average city-bound 'hood rat, but it's also a good reminder why venturing out of the city is a worthwhile exercise. Danno's is exactly what you expect from a classic American bar, except this one is tended by an adventurous mixologist, not just someone who knows what goes in a cranberry-vodka. Danno's casual atmosphere and comfy club chairs lend a relaxed air that facilitates anonymity -- something that's hard to come by in the big small town that is St. Louis proper.

    A local establishment that looks and feels like a sleek national “better burger” chain. (Can multiple franchises be far behind?) Uncharacteristic of the genre, here you are actually permitted to order your burger less than well-done. And if you dial all the way back to the stated limit of medium-rare, the result is very good: beefy, juicy and in need of little more than a bun to be enjoyed. That said, a plethora of cheeses, sauces and toppings are available (including some oddities like avocado, hard-boiled egg and fried pickles). The French fries (regular or herbed-garlic fries) are divine.
